Halloumi fajitas

Why not swap the traditional chicken fajitas for halloumi fajitas filled with peppers, onion, avocado, lime and coriander ... oh and of course sweet chilli and sour cream!

SERVES: 2 | COOK & PREP: 20 Min

Ingredients

  • 1 block of halloumi, sliced

  • 1 red onion, roughly diced

  • 1 red pepper, cut into strips

  • 2 cloves of garlic finely chopped

  • 1 tsp ground corriander

  • 2 tsp paprika

  • Small handful of corriander

  • 1/2 avocado, stone and skin removed and sliced into strips

  • 1 lime cut into half

  • 2 wraps

Method

  1. Set a large frying pan over a medium heat and add the halloumi slices (you do not need oil for this as the halloumi let's out a little water). Cook on both sides for roughly 5-10 minutes or until nicely charred on both sides. Set aside on a plate.

  2. In the same frying pan add a drizzle of olive oil and add the onion and pepper, cook for 5 minutes or until starting to soften. Add in the garlic, paprika and ground coriander and mix together. Add in the juice of half a lime and your cooked halloumi and stir.

  3. Lay out both of your wraps, devide the halloumi mixture between both wraps, top with the avocado, corriander a squeeze of lime juice, sweet chilli sauce and sour cream and tuck in.
